Quick Taco Soup

You will not believe how quick this soup cooks up! And not only is it quick, it’s easy too!

I make this soup in my Celebrating Home Bean Pot. If you don’t know anything about Bean Pots, they’re crockery that are microwave, oven, & dishwasher safe. You can make anything from chocolate cake, to vegetable dishes, to main meals in them. I have used mine primarily to make Chocolate Lava Cake in the microwave and it is divine! Quick Taco Soup

Ingredients

  • 1 lb. ground beef  We use venison that the great hunters bring home in the fall.
  • 1 can diced tomatoes with chilis
  • 1 can of corn
  • 2 cans of red kidney beans The original recipe only calls for 1 can, but I want to stretch this dish as much as possible, so I do 2 cans. If you don’t like kidney beans, I think you could easily use a different type.
  • 2 packages of taco seasoning

Gather all your ingredients.

Cook your meat for 15 minutes in the microwave in your bean pot. Be sure to check it & stir it around a couple of times. My meat was still frozen, so I cooked it for 20 minutes. Please excuse the caption mess-up, but I don’t know how fix it! Hazardous as ever…sigh.

Add InMixed

Cook in the microwave for 15 minutes. That’s right, in the microwave!!!

DoneWarmThese Bean Pots can keep stuff warm for 3 hours. Can you say convenient? Tonight the hubs didn’t get home until after 6, then we had to run an errand, then we got home to eat. This was still warm an hour after getting done!

Yummy!
